My understanding is that GB does not offer a dedicated app. I guess that's fine, as long as the course material is made "mobile friendly".
Can someone please confirm that I can access all of the GB course material (videos/ program etc.) from e.g my iphone?

The courses are responsive and mobile friendly. All of the videos will play just fine on iPhone.
The mobile version of the site is pretty fast =]

Perhaps not quite OT, but:
I plan to get F1, and do most of the workouts at my local crossfit box. Are the instruction videos made to follow along, or simply to be watched before doing the workout?
(Perhaps a silly question, but it's not necessarily easy to follow along a mobile video when in a noisy gym. Not to mention those darned ear plug cables...)
The videos demonstrate the element to be performed. No need to look at it at all while training when you know what it is.
