Book on nutrition

I'm searching for a good book on nutrition and more.

Not that much on what I should eat etc.

I am more interested in knowing like what each vitamin does, what kind of food contains which substances and what are the effects of those when they enter the body, info on the substances that the human body creates (like adrenaline, testosterone).

Gymnast's point of view is preferred of course.

A beginners book on nutrition I highly recommend is:

Nutrition made simple / Robert Crayhon

Looking for a gymnastics point of view on nutrition is like looking for maximal strength training advice from a yoga master... It is not their field and you will not find quality advice there on the subject. This is a world of specialization.

The thing is that I'm not really looking for a nutrition book but something that contains scientific explanations of carbs, fat, omega3, vitamins etc.

I want to gain insight in these topics, I don't want to use it in order to lose fat or anything like that.

Give The Encyclopedia of Healing Foods a read. It is very detailed and highly informative. It covers food components including accessory nutrients and phytochemicals as well as protein, vitamins, minerals etc. It also cover the healing propensities of vegetables, grains, fruit, etc whilst also informing the reader of negative side effects. This is all summarised in the chapter dealing with the basic principles of a good diet.

Only thing I would say is that it is not a sport specific reference book, however, if you study it you will be able to design your own programme to help you attain your goals.
