Fresh vegetables (and soup)

Hi,

I sometimes can't cook vegetables for dinner, but can always get fresh ones. On such an evening, should I count the fresh vegetables for this task or leave it unchecked?

Also, does vegetable soup count? (In my case that generally means vegetables boiled in water - carrot, celery, onion, etc. - often with either split peas or lentils).

Hi Dan, some vegetables are better to be eaten without previous cooking process simply to maintain certain type protein function that usually is lost FIRST due to high temperature. so do not worry about fresh vegetables. same thing for soup, without previous cooking is better.
