Between the Italians and French(last years vacation) you can never run out of food ideas. From learning the basics of quality ingredients like cheese to cooking methods you can have great food and delicious.

Only a true chef/health-minded person would turn a vacation into a learning opportunity first-hand. Kudos to you for living the good life. Were you all over Italy or just a certain region?
Tuscany and Rome.
I have always like getting out and seeing how other people do it. The Jewish Ghetto in Rome had some of the best "basic" foods, mind blowing. They took regular ingredients and elevated them to a level that is crazy.
To stay heathy you need to know how to cook. And, the better you cook the easier it is.
To aspire to be great at something your job, hobby and passion all have to be the same thing. For me it is.
