I was watching Coach Sommer's interview with Barbell Shrugged and in it he says that it's wise to do all the row work with false grip but in the video in Foundations they're doing it without a false grip.
So which is it false grip or a regular grip?

Regular.
False grip is covered in depth in the rings series.
At this stage of your training you may play around with occasional false grip work after your daily assignment is completed; however concentrated falsegrip work is for intermediate level athletes - not beginners.

Try false grip dead hangs or having false grip in the bottom portion of the rows if you lack lat mobility, a few sets after your main workout. It is not very hard but you will slowly be introduced to false grip this way without over training
I've been working on 3x30s a couple of times a week doing dead hangs with a hook grip (not sure if this has an actual name but you just make a fist and bend at the wrist), is this an acceptable amount for someone still in Foundation?
