As the title says, can you have a separate day for mobility?
maybe use one of the rest days of the week for mobility do all the mobility exercises for Foundation one Can you even add additional mobility that isnt in Foundation one?

Well, in Coach Sommer's 3rd podcast with Robb Wolf, he says that in his workouts, he originally planned his workout to be a 4 day workouts per week, but he decided to take out 2 of them and replace it with 2 full mobility sessions. So 2 days a week of conditioning, 2 days a week of mobility for him personally
If you really want to see progress with ROM you want stretching/mobility to be every day, at least 5 days/week. Many athletes will succeed making strength gains 2-4x per week but they should stretch on rest days if flexibility is a priority.

I am doing a 5 day split, so does that mean I have to do mobility/stretching/ flexibility 5 days a week or all 7 days? since I already have a packed schedule wont it be too much?

You can do a high intensity stretching session on saturday. And you can put in 2 days of stretching after your workouts.
For strength more is not always better but the more you can stretch (with correct alignment) the more gains you will see.
Loaded, active stretches which engage your muscles in a stretched position are the most useful but must be limited to your current capacity but watch TV in the splits or pancake if you can. If you don't have time that is okay, enjoy watching all those athletes out there who spent the time to develop their flexibility at a high level.
