Is it better when training handstand technique to roll out, or cartwheel out? Whenever I bail, I've been raising one arm and letting my body fall to the opposite side. Will this cause imbalance, or is it nothing to worry about?

Just do whatever is natural. It's not a big deal. But know how to do both in case you find yourself in a weird situation.
PROTIP: Whilst being a very effective brake, your face shouldn't be used to stop yourself from falling - I learnt this from experience.
Depends where you practice, if you have a lot of room around you then what you are doing is fine, if you are limited with space or people are walking about (if you practice in a gym) learning to roll out when there isn't room for you to pivot out is a good idea.
